1½ oz. Sedna Vodka
1 oz. Rodrigues Apple Schnapps
3 oz. pineapple juice
3 oz. piña colada mix
1/2 oz. lime juice
2 tbs. sugar
Pineapple slice for garnish
Combine the first six ingredients in a blender; add 1 cup ice.
Blend, and pour into a glass.
Garnish with the pineapple slice.
Had that Jimmy Buffett song "If you like Pina Coladas" running through my head this morning, I have no idea why, I hate that song, no wait, really, hate isn't the word...detest? Nahh not that one either. Abhor? Abhor...hmmm...yep that's the word. The only good thing about that song is that it motivated me to come up with this drink idea, my version of the classic Puerto Rican drink, similar to the Chi Chi or King Henry version since vodka is substituted for rum.
I am not a rum person, so I enjoy substituting rum, which I hate, with vodka, which is ok, into cocktails.
It's a wonderful sunny day out there for the first day of the food fishery, imagine, us Newfoundlanders, raised with cod as the life blood of our province, only allowed to catch them twice a year.
It's a sad sad world out there. All we have is that it is always darkest before the dawn.
